We roast our favorite decaf medium dark.  We find it delightfully smooth, with a cinnamon sweetness.  It blends well with our caffeinated Mexican coffee for a half-caff, drink-all-day treat.

Region: Altos de Chiapas

Varietal: Bourbon, Typica, Mundo Novo 

Elevation: 100-1,800 MASL

Processing: Washed

Roasting Wood: Hickory

 

This coffee has been decaffeinated using the Mountain Water Process, which is similar to Swiss Water Process.  Essentially, the beans are soaked in hot water to remove the caffeine and oils, the water is filtered and the caffeine removed, and then the oils are returned to the coffee beans and very little flavor is lost.
